This is a huge flaw in your importer from Wordpress. Sure it imports the text, but uses a link to the old site to display the images. Now the new site is live, the old site is dead, along with every picture on each blog post on the new site (about 600-700 of them.

Why does the imported do such a goofy thing? How do I fix it short of hours of manual editing?

On top of this, since moving the site from dev to live, most of the EB menu items on the left hand side have stopped working. For instance, I can no longer click "Settings" and have the settings appear. I truly wish I'd never bough EB; it has caused me so much trouble.
Firstly, I would like to clarify the reason why it can't import those Wordpress image into Easyblog through that migrator is because that is no other way to run a script to automatically move those image file from Wordpress into Joomla, and the migrator only read the xml file content, unless Wordpress folder is under Joomla root directory, so it might be possible to automatically copy those image file into Easyblog image media folder.

Regarding that image link still link to your Wordpress domain is because our migrator is import whatever the blog content return in Wordpress xml file, I believe those image link is show absolute paths in Wordpress xml file so that is why it import those image path with your Wordpress domain site URL.

By the way, It seems like you are requesting support for cpaviation.com but your licensed domain is gravityit.net . Please understand that Pro versions only entitles you to support for 1 domain only.

Should you require support for additional domains, please consider upgrading your license to the Unlimited version or purchase an additional subscription for this site.

Keep us update once you have upgrade your license then I will run a script to replace all those old domain to your current new domain with the image path from your existing migrated blog post.

Then you have manually move your Wordpress image file with the directory folder into your current Joomla root folder in order to show the image file on your blog listing frontend.

On top of this, since moving the site from dev to live, most of the EB menu items on the left hand side have stopped working. For instance, I can no longer click "Settings" and have the settings appear. I truly wish I'd never bough EB; it has caused me so much trouble.

I've checked on your backend Easyblog page, I suspect your Easyblog installation is not install complete so causing this issue.
To fix this, you have to download the full installer from https://stackideas.com/dashboard then upload through your Joomla backend installer page again.
