I am wanting to add EasySocial to a site that already has hundreds of users. I would then need to get all the users to fill out EasySocial profiles. Can I somehow import the users into incomplete profiles which they would then complete the next time they attempted to login?

What is the best way to do that. If you have a page about this already documents I would love the url.

Theoretically speaking, there is no "import" or "export" going on. Your users in Joomla is already available for EasySocial out of the box.

You only need to head on to the user's listing in EasySocial and assign a profile to them and you are good to go

I do have one other small question. When I mark them as using a certain profile then I assume that the next time they try to login they will need to fill out the profile the rest of the way?

Yes, provided that you enforce them to fill in their details under Settings > Users
