It seems like you hitting this following error :

Fatal error: Call to undefined function mb_convert_encoding() in /xxx/administrator/components/com_easyblog/includes/blocks/handlers/abstract.php on line 143

Can you request with your webhosting provider to help you enable this php_mbstring from your PHP server, because this is minimum requirement in Easyblog.
