Currently profile data can be exported as a zip file that when uncompressed shows data in html format. This makes it really easy for a human to read it but doesn't meet the GDPR criteria that the data should also be machine readable and portable (i.e. software should be able to easily extract the data) so we also need the option to export as something like JSON, XML or even CSV so as to be GDPR compliant.
If you look at Facebook you will see they offer HTML for reading and JSON to meet the data portability requirement of GDPR
