However,
1. Can I change the tab name Custom Fields to something else?
2. I set this field as Required. And after I submit the post without selecting this field, it only turned the tab name to RED and nothing else happened. I wonder if there can be a message popup or something else that can mention the user.

You can change them here on this language strings COM_EASYDISCUSS_COMPOSER_CUSTOMFIELDS_TITLE="Custom Fields"

Currently, that how it should behave. Perhaps it would be best if you can submit a feature request regarding this issues by creating a new ticket on the forums and set it to "Feature Request" so that everyone else could vote for it. We will prioritize this feature during the development process for the next major version of EasySocial if there are more people request on this.
