To disable the fields tab, go to settings > general > composer and turn off the option "Enable Fields Panel".

If you want to use custom fields, they are associated with categories. You can create custom fields, custom fields group. Then, edit the category and assign a group to it

It seems like there is a bug for custom field settings. I've applied the fix inside your /components/com_easyblog/themes/wireframe/composer/panels.php and it should be working fine now.
