not sure if I get correctly what you mean here but if you want to change fields and or delete some you can do this in the easysocial backend directly.
click on profile types - > then click on the profile type you want to edit (for example "registered user") - > then on "custom fields"

there you can change all the values and delete fields that you don't need.
