Is it possible to hide the tabs on the right side of the composer window from my users? As an admin I want this level of detail but for my users I want it simple. They don't even get to add blocks.

I am really sorry for the delay of this reply as it is a weekend for us here. Unfortunately right now there's no way to do this currently but you can turn some of these tabs off in the settings of EasyBlog under Settings > General > Composer .
If you do not want to allow them to use the blocks, I think you should switch to the WYSIWYG editor instead of using the composer.
If I use the wysiwyg editor does the system look the same?
All I want them to do is the following:
- Post a cover
- Select their location
- Title
- Short Text
So, aside from using CSS to hide the Blocks and Right Control Panel in the Composer you don't have an off button or code written to hide it if they are not present?
