To hide the age you can go to your site backend > Components > EasySocial > Settings > User > Profile tab > disable the Display Age option there and save your changes. It will hide the age of the users from the Timeline sidebar.

For the birthday and age displaying in the About section you can hide it by change the setting from your site backend > Components > EasySocial > Users > Profile Types > choose the profile type > Privacy tab > look for profile fields > choose Only me option for the Who can view my birthday field > Save your changes. This change you made will only be applicable for the new users registering under this profile type. To make this change applied to the existing users also then before saving your changes tick this checkbox https://take.ms/RTEgk and then save your changes.
