1) Is it possible to have custom fields for entries?

Unfortunately this wouldn't be possible currently and EasyBlog wasn't designed to be a CCK

2) Can we create different blog templates? (IE: for a cooking blog, we may have some specific fields for ingredients, etc.)

You can actually achieve this with some customization on the theme file but it wouldn't be possible out of the box though.
