I have help you disable that standard post option from backend > easyblog > Setting > Workflow > Mircoblogging

Also,I applied this CSS code in your yoo_nano3 template css/theme.css file. (Hide that share button)

#eblog-wrapper .social-publish {

  display: none !important;

}

Regarding with your module "Posted by" language string, you should change it from your JoomlaFolder/language/select your language file/select which Easyblog module you would like to change the language string
Or may i know which module of that?

I created the file Italian, but I still always in English.

I have tried to download that Italian language file of mod_latestblogs and move it over in your file, then the "posted by" already translated.
I also help you backup your previous mod_latestblogs language file, i rename to -> it-IT.mod_latestblogs.ini_bak
If you want to modify some of language string, you can manually to edit it from this file it-IT.mod_latestblogs.ini
