1) How do I hide feeds or streams on the login page?

This can be disabled from the theme settings. Access the back end of EasySocial > Themes and click on the theme that you are using.

2) Where are the module positions? I try to assign a joomla module to a module position in ES but no module positions of ES are showing there

You need to manually type these positions, http://docs.stackideas.com/administrators/module_positions as they are not registered in the template. Alternatively, turn on debug mode in your Joomla template options to see a list of available module positions on the site

3) What can profile types do? If I use ES for a dating site, Can I use them to define different levels of paid or subscribers?

It really depends on what you are trying to achieve but basically the strength in the profile type allows you to request for different information from different user types on the site

5) If I want to add changes to CSS, do I do it directly on the CSS files? That would be overwritten once I update right?

Ideally, you should place your css customizations within your template's css file rather than adding them into EasySocial's css file.

4) How to remove ES branding and replace with mine in notification emails? I have the pro version of ES, do I have to do anything to remove Backlinks?

Not really sure what "backlinks" are you referring to here but the only backlink that appears is on the page itself but if you are using the Pro version, it shouldn't show up at all on the page.
