I think I've figured out a way to accomplish this:

Use the email phraser in Discuss to grab registration emails and post them to a specific forum.

With that, I just need to find the right combination of settings for user registration. As of now, I have the EasySocial component on lockdown, and will enable registrations during lockdown. I think I have everything set up correctly to allow ES to take over site registrations from the core Joomla! users component, so now I just need to figure out email notifications, and have them sent to a specific email address. I've also enabled administrator approval for new registrations.

Am I on track with this or way off?

I have a little lost here about your current requirement, if you would like to override the Joomla registration, what you need to do is enable this 'Enable com_users Redirection' setting from this plugin 'System - EasySocial' (screenshot : http://take.ms/luVKC).

And what I not understand is about Easydiscuss what you trying to achieve, can you elaborate more details regarding this?

This was part of what I was looking for. I figured out the rest. What I was trying to accomplish was having the registration email sent to administrators be posted as a topic in the forums. Setting the email phraser to that will post the application. As always, thanks for the help!
