I'm assuming you could use Joomla's Language Manager Overrides to change text, and also make additional overrides in your template for email layout based on: http://docs.stackideas.com/administrators/templating/template_overrides

If you are wanting to update the logo, you can follow the guide provided by Justin. As for the template files, they are located in /components/com_easysocial/themes/wireframe/emails/html/
