Add the file ...\components\com_easysocial\themes\wireframe\conversations\default\lists.php
on the line 48 code -
<li>
<a href="javascript:void(0);" data-es-rename>
<?php echo JText::_('COM_EASYSOCIAL_CONVERSATION_EDIT_TITLE');?>
</a>
</li>

Users can then Edit Title and in the list of conversations

I am not sure if it is ideal to add those title fields when composing a conversation because titles should be editable only on the listings area.

For editing, Yes
I propose to simply add fields to users can initially set the title of the conversations
