Within EasyDiscuss I want to add a way users can contact us. Is there a 'Contact Us' option, rather than create a ticket, or how would you suggest achieving this?

Hm, EasyDiscuss wasn't created for "contact us" but why would you want to use EasyDiscuss as a contact us form eh? There is already a contact form for Joomla.
Perhaps you could consider getting them to post the question "privately" so that only the poster and the moderators could see the post?
