We have been having issues with images not having ALT tags from EB. See attached screenshot from Bing Webmaster Tools, Google and others give similar results.
How can we get this improved or fixed?

I've checked in your site and your screenshot, it seems like that ALT empty value is not coming from us, you can check my attached screenshot below and your screenshot, it actually point into your site frontpage this module (OpgroeiBlogs - Recente blogs), if I am not wrong, this module is coming from sprocket team.
If yes, perhaps you can consult with their developer team regarding this and see how it goes?
mmm, so no ALT tags in thumbnail version of EB post images? This would explain why there is no ALT tags on our homepage then in the RokSprocket module? Is this correct?
We are not responsible in generating the HTML codes in RokSprocket. It is the responsibility of the RokSprocket module to generate it's own HTML tags. We only provide the necessary API for 3rd party extensions to retrieve the post cover's URL.
Mark, I understand that you not responsible for their code... However they use the existing EB post images and I guess the ALT tags for the images are set in EB. So our guess is that the thumbnail images in EB has no ALT tag and therefore RokSprocket may not be able to show it. Does that sounds like a possibility?
If you are using post cover, the post cover is just a URL it is not the image tag. Image tag that needs the alt tag needs to be generated within their template file respectively.
If you are using WYSIWYG editor to embed the image into the content, then you would need to add the alt tags when you toggle the editor.
If you are using EasyBlog's new composer editor, it does not have an alt tag currently.
EasyBlog composer does not support alt tags if you are embedding image into the content. If Roksprocket is picking up contents from the editor, it does not have alt tags.
However if it is getting the image from the post cover, the module itself needs to generate the image tag and it should be possible to add an alt tag in their module's template file.
