I'm not entirely sure what is the issue as of yet so I will do some tests and if you have some helpful data, it would be great.

I suspect that the browser cookies is being cleared periodically causing the user to logout.

May I know if the same issue is happening when the same user is using a different mobile browser or pc browser?

Also, make sure the user is not using private/anonymous browsing mode.

I agree it's most likely mobile cookies closing the sessions.

Users do not experience this issue when using Chrome,Firefox,Safari on laptops.

70% of our users use iPhone / iPad iOS, so I don't have other mobile browser feedback.

Sure let us know if you have anymore data. One thing you or your users can try is use both normal and private browsing mode on mobile, and see if there's any difference in terms of how long the session lasts.

Do note that if the user is logged in on both mobile and desktop, when signing out of one device, the user will also be signed out on other devices, since the user is essentially signing out of the site altogether.
