Editing items with attachments is pretty tricky because it involves quite a bit of the story form and we're actually still finding a better method to display the story form within the stream item itself. Pretty tricky, if you ask me. Even Facebook is actually not allowing this and I believe they are also facing a very similar dilemma

Actually Facebook does have an edit button for items with attachments I attached a screenshot. I understand that it might be technically tricky, but I do hope that a solution is found in the near future. Just relaying comments from my BETA testers. This seems to be one of those small details that causes some frustration.
