Yeah, currently it is not possible to have nested categories due to the complications of the "ACL" as "ACL" are tied to event, group, page categories. However, we do intend to extend this functionality in the future

2. does a tool like 'Mosets Tree' your present in your page https://stackideas.com/apps can fit my needs?

Mosets Tree is an extension by http://mosets.com . The app extends the functionality to display items from your Mosets Tree listing into your profile page and also generate an activity stream on the stream.

3. does the template I have (same than you demo page) is ready to work with this different levels or do I need to customize it?

Hm, not entirely sure about this question though.
