I see that EasySocial 2.0 has been released. I'm wondering if it's possible that I can keep the current layout and look that I have, but upgrade to 2.0 to get new features like Pages.

Unfortunately no because this is a major release which we spent months redesigning from ground up to ensure that it still looks modern and optimized for speed.
Your old modifications may need some alterations before it can work on 2.0 but I would strongly suggest that you test this on a staging site first.
