Custom fields are associated to custom field groups. You first need to:

1. Create a custom field group
2. Create the custom fields and assign it into the custom field group.
3. Assign this custom field group to a category.

Then, when composing your blog post, select the category and you'll notice that the fields tab will be filled with these custom fields
