Is there a way to make a complete copy of a page (to save an earlier version) or to take an older version and customize it?

I assume you trying to ask is duplicate your existing post content then you can able edit the same blog content in other new post right?

Also - when working with a table - can cells in a row or column have a different color from the rest?

Unfortunately that was not possible to achieve this in Easyblog built-in composer, but this can achievable when you switch your editor to use Tiny-MCE, you can check my attached screenshot below.
