Currently, you are not required to set them as those access are not used for those fields. In order for you to set each fields according to your profile types, create different workflow for each of your profile type and assign them accordingly based on your need.

By the way, i have consulted this with our developer and it seems that there are confusion regarding this access control on the fields. I have logged this issues for our developer to further check this.

For current time, to avoid confusion, you can apply attached file at this path .../administrator/components/com_easysocial/themes/default/apps/form/default.php as this codes will hide those access from your site.
