You can head over to Backend -> EasySocial -> Profiles -> Select Profile -> Custom Fields, click on the fullname field to load up the configuration panel, and set the full name format that you want.

In version 1.0.x, you can only choose between 1 single name or 3 separate names, in version 1.1.x (currently in Beta), we've added option to select only first and last name.
