Is it possible to have no default category...That way when a blogger is posting they will not mistakenly add it to the default but will be prompted to add it to an appropriate category?

Unfortunately, it is not possible to achieved this as it is required for us to have default categories so that during creation of new blog post, it(blog post) will always be assigned to one category.
