What my suggestion is, you can set those each of the user app only allow to access by your site "Moderator" user profile type, so other user profile type do not have permission to access these user app on the site, you can refer on my attached screenshot below which part i mentioned.

Yes, you need to go into each app to set the permission access.

I noticed not all the apps have disappeared. Will take some screenshots and attach later.
Would it be easier if I just deleted the Application link from the drop-down menu?

Which application link are you referring to? Ideally if you do not want user to access the apps section on the front end, you just need to disable the option highlighted here, http://take.ms/LlZcx . This can be disabled under Settings > Users > Layout

Also, I am trying to get the Recent Photos module to only show the member's own recent photos from all albums. At the moment I am told that needs to be hard coded because atm it shows everyone's recent photos from the whole site.

But then I read the Photo Albums App and it says the following (see attached also):
This application will display a widget on your profile. It will display a list of recent albums that you have created on the site to your friends and followers.

So that tells me that it would work how I want it to. But how do I get that App/Module to show up by default instead of the current Recent Photos module already on there which shows everyone's photos.
