Hi,

what is the correct way to customise the ES registration email template (the one users receive when they first register that contains their login details)?

It depend on what registration type you set from the profile type, you can modify this following email template file.

JoomlaFolder/components/com_easysocial/themes/wireframe/emails/registration/approvals.php
JoomlaFolder/components/com_easysocial/themes/wireframe/emails/registration/auto.php
JoomlaFolder/components/com_easysocial/themes/wireframe/emails/registration/verify.php
JoomlaFolder/components/com_easysocial/themes/wireframe/emails/registration/login.php
