I'm trying to display the ES Group Mod by the order of "latest". I want to mix up what groups are being shown so I would like to know if it's possible to change a Groups creation date to accomplish that?

Do you mean you would like to change your existing one of the group creation date?
If yes, only 1 way you can change it from database -> find this table `#__social_clusters` > find your group title > modify `created` date
