Hi Mat Casner,

Unfortunately, there is no setting for change the date format in the blog listing currently. However you can do template override to change the date format ( refer this date format ) by:
1.Click Extensions>Languages>Overrides>New
2. Language Constant * => DATE_FORMAT_LC1
Text => Change into your desire date format
