I am assuming that you meant the single category layout? By default, EasyBlog will use the category title unless you explicitly set a different title under your Joomla menu parameters (if you created a menu for this particular title)

It works on your demo as described, but is not working like that for me.
I have not created any menu items for the easyblog categories.

I've inspected that you've set the Browser Page Title for the EasyBlog frontpage menu item http://screencast.com/t/GfpjXcjoZP where every link that append to this fronpage menu item will be using the same page title http://screencast.com/t/oKk860Sx

So, as long you want to use that configuration, you need to change the EasyBlog SEO setting (SEO> General>URL Format For Entry View -simple) and (SEO>Advanced>Routing Behavior-default) where it will not using specific menu id of 1469 (it will not refer back the frontpage menu title)

In order to make the single category page using the same page as category name you can make a hidden menu and create a single category menu items for each of the category. By using hidden menu, the menu will not appear on the front page (I've make a sample for the general category)
