Regarding your issue,look like you've configure the option 'hide empty categories' to Yes. I've re-configure your EasyBlog and turn off this 'hide empty categories' setting. You can find this setting at EasyBlog backend under setting -> workflow -> general.

Can you give it a check now, it seems work fine now.
