1. display subscribe via email on the category tab page instead of RSS - if I turn RSS off then I don't get email option on this page?

2. Hide the users tab for certain user groups - only want member list available to site admins.

First attachment:
I had switch off the user from your toolbar in:
Backend > EasyDiscuss > Settings > Layout > Toolbar > Show members button
I'm sorry there is no settings for email subscription for category listing.

Second attachment:
My coleague had directed your to backend > component > Easydiscuss > Settings > Notifications and look for email.reply.answered.html.php
There you can change the button style.
To change the text look for COM_EASYDISCUSS_EMAILTEMPLATE_READ_THIS_DISCUSSION in:
Joomla\administrator\language\en-GB\en-GB.com_easydiscuss.ini
