I have check your site and it seems like the issue has been fixed. Here the screenshot: http://screencast.com/t/GBYb26bphLI . Perhaps your site and browser still caching the old template. Can you clear all your site and browser cache and see how it goes.

However, I notice that the formatting choices are very limited. This discussion window, for instance, has choices that do not appear in the ES discussion window.
(bold, italic, underline, link, picture, video, bulleted list, numeric list, list item, quoutes, code, smiles)

How can I add these?

Unfortunately the discussion app you are referring to in easy social is not related with easy discuss but it is a built in app in easy social . Therefore it has none of the features that you referring to.

This is disappointing and does not make any sense to me. It should be a simple matter to add the formatting features in whatever script controls the ES discussion window. Hopefully this will be added in a future version of ES.
