I am really sorry for the delay of this reply as it is a weekend for us here.

I'm wondering if I use the EasySocial and EasyBlog and users subscribe the Category or Blog Post....
Will the notification show in their easysocial notifications? (I don't need email notifications everytime someone post a comment, so this would work better for me)

Yes, if the user is subscribed on your blog, Easysocial will send system notification to these subscriber in your site, when the new post is published.
