I am really sorry for the delay of this reply as it is a weekend for us here.

Unfortunately currently that is no setting to replace to show author and category name under cover image area unless you modify the core file.

May i know which page (blog entry page or blog listing page) you would like to change this?

But I can point you which PHP file you can modify it.

JoomlaFolder/components/com_easyblog/themes/wireframe/blogs/latest/default.main.php (blog listing page)
JoomlaFolder/components/com_easyblog/themes/wireframe/blogs/entry/default.posts.php (blog entry page)
