I am really sorry for the delay of this reply as it is a weekend for us here. It looks like you are running on a much older version of EasyBlog and I believe there are some incompatibility between the editor and Joomla 3.x. Is it possible for you to upgrade to the latest version?

You can edit your text color by inserting your desired color on your text on css below. You can modify your formating menu at Backend>Components>JCE editor>Editor Profiles>Default>Features and Layout

You can either disabled them at Backend>Extension>Modules>Categories( Easyblog - Categories Module )

Regarding the colours, can't we get the same possiblity as in a simple article as in the file I attach.
I can do it myself but the person handling the website can't....

In order for you to include those icons to those view your refer above, you have to go to Backend>Components>JCE editor>Editor Profiles>Frontend>Features and Layout and drag those color change to it default. By the way, i have included them for you as you can see https://screencast.com/t/Jh98F1Yp and it should works as it should now.
