When a new user registers, there is a "Note" below the fields which I would like to amend in some cases.

In particular I would like to amend this Note...

You can go to Backend -> EasySocial -> Profiles -> Custom Fields and click on the field to edit the field's title and description.

hello,
you can change the notes and titles in your easysocial backend.
head over to profiles -> klick on "registered users" or the name of the profile that you have setup there.
then on the next screen click on "custom fields" - that shows all your available fields. in your example with the email click on the email field and then next to it a box will pop up saying "joomla user email".

click on the "core" tab there and you'll be presented with the language strings for the title and the description of this field, the note field would be "COM_EASYSOCIAL_FIELDS_PROFILE_DEFAULT_EMAIL_ADDRESS_DESC" - copy that and go into your language file.
search for the string and replace the text after the = with the note that you want to leave. also you can setup there if you want to show the note(description) and the title at all.

the same way works for all other fields as well. hope that helps
