How I can disable some search types (like people) ?

Sorry but currently it is not possible to disable search types currently.

I would like only groups and events, and in group : only city and zip code for example.
(If isn't in configuration, I'll overide in my template : search/advanced/default.php)

These are actually custom fields of the group category, event category, page category. You can edit the respective category, and go to the custom fields and set the custom field as not search-able. Take a look at an example here, http://take.ms/1KkKF

Once the field is set as not search-able, then it will not appear in the list of search-able fields.
