1) This is normal behavior. The preview in the backend will not necessarily reflect the same in the frontend due to varying themes/templates and custom styling.

It would be best to adjust the positioning at the frontend.

2. Based on the screenshot, it looks like you have exceeded the maximum character limit indicated in the custom field(http://take.ms/5YNWc).

Perhaps you can increase this limit if you want to allow more content in this field?

But when new member add their profile they will try to add a photo that fits the preview, which will not be correct on the front end. No way to adjust the preview i guess eh?

Unfortunately there is no way to adjust the edit page preview since it depends on the responsiveness of the screen/browser.
