Currently, there are few ways to achieve this, and yes archive also would be a great ideas. You can either view them using module(Easyblog Archive module), using toolbar (archive sections) or using menu itself as you can see here http://take.ms/1F1H0

I've tried all 3 options but have been unable to view the archived posts again.

Any chance you could explain one method in more detail?

Also, if I've archived a post am I able to either 'un-archive' it, or edit it?

Once you have those permission to edit them, you can unarchive them, by editing those post and published it.

Ah sorry - yes I can see them on the front end, I meant how do you get to them from the back end?

Once I've archived them, they disappear from my list of posts from the back end. My question is how do I actually get to them from within joomla to then be able to edit or unarchive them again?
