If you are using EasySocial 1.2.0,

1) Where do I disable the "Account Login" from appearing in the activity stream?

You can turn this off under Applications > Users . There's a settings for this in the application.

2) In which file would I entirely remove the sidebar (and associated widgets) from the dashboard view?

Take a look at the file /components/com_easysocial/themes/wireframe/dashboard/default.php

3) What file will give me control over the links in the main user dropdown menu?

Take a look at the file /components/com_easysocial/themes/wireframe/toolbar/default.profile.php
