Use case: Manage the member list and interaction for a sailing club (< 200 members).
Viewing would be restricted to logged in members only.

Fundamentally would like to provide logged in members the ability to view club members and their profiles, with some fields reserved just for admins and their use. Also would like to provide a platform to allow folks to share their photos with all of the members, not just 'friends' (a feature we would like to disable). I'm guessing the creation of a single group, and default addition of all members into that group would accomplish that.

Is this an accomplishable goal with EasySocial?

In the current version of EasySocial, it is not possible to set privacy of certain information in the group to admins only. However, each registered users can set their own profile privacy.

Sure you can use 'Closed' or 'Invite only' group to restrict photo sharing to only members who join it. However if you set your group to 'Open', all logged in registered users can view the group activities.

Is it possible to share photos in a group with unregistered users?

If the group is public, unregistered users can view the group including the photos.
