I have a consultant that only writes our blog and I only want to give them access to edit Easy Blog. How would I create a user in Joomla so that they would be able to log into Joomla and only access EasyBlog?

I'm sorry but it is not possible to do that thru Easyblog. But you might want to use the Joomla Menu Manager where you can set the access to Special: http://screencast.com/t/9es5s9Qmk so that only user group that are in this special access can view the page.
