By labels do you mean tags? Perhaps you may provide screenshot to tell us what you want to achieve

The reason I use the word "labels" is because I notice in the code and in your database you have a concept of label - e.g. table "#_discuss_posts_labels" but I can't find anywhere in the settings to turn this on or configure the labels....?

Unfortunately in easy discuss you cannot add labels in the moderator menu .

But you may edit the en-GB.com_easydiscuss.ini file to change the label name. To do so, the file is located in your joomla folder > language > en-GB > en-GB.com_easydiscuss.ini .

Inside the file look for this statement:
COM_EASYDISCUSS_ACL_OPTION_MARK_ON_HOLD
COM_EASYDISCUSS_ACL_OPTION_MARK_ACCEPTED
COM_EASYDISCUSS_ACL_OPTION_MARK_WORKING_ON
COM_EASYDISCUSS_ACL_OPTION_MARK_REJECT
COM_EASYDISCUSS_ACL_OPTION_MARK_NO_STATUS
Then edit one of the statement as shown in this screenshot example http://screencast.com/t/cS1NamQLxdxr
