1. There is "entry" for items url. Is it possible to remove this?
2. There is "listings" for categories url. Is it possible to remove this?
3. Change the "categories" to "category" for categories url. Is it possible to do this?

If you are using native sef from Joomla, then I am sorry but the above cannot be change because all these are needed for Joomla to parse the sef link correctly to the actual non-sef link

Anyway, the above still achievable if you using third party sef component such as SH404sef. For your information, if you are using sh404sef, EasyBlog do have the integration with sh404sef where you can customize the sef links the way you wanted

I have other questions is there menu layout to show lists of articles/blogs inside 1 category? It's same as the joomla content category list layout. I just need the list of titles displayed with no introtext, etc. This is for tutorial section.

EasyBlog do have the single category layout where in this layout, it list out the blog posts that associated with the specified category. E.g.

http://play.stackideas.com/blogs/categories/listings/freebies.html

If you want to display a table-listing layout, you might need to override EasyBlog theme file for the single category page to show the content in table-listing layout type

How to add something like "Your Site Details" on your answer page? Does this info saved to database? Can other members see it or only visible to moderator?

Ah, we actually customized our EasyDiscuss to have the 'Your Site Details' form display when you reply to a topic. And yes, the data was saved into database and only we moderator can see the information so as the customer, you are safe to provide us your site information via the form
