If yes, you may access into your backend > easy discuss > categories > new ( http://screencast.com/t/6OSQ4t1lQ ) to create a new category with a parent category ( http://screencast.com/t/iPfzBsjOEc ).

Or if you want to set existing category with a parent category you may go to backend > categories > select the category that you want and set which category that you want to be a child category like this screenshot shows http://screencast.com/t/iPfzBsjOEc

If selected 'Random' i want see list:
Food
Travel

If i in 'Food' category, i want see list:
'Thai food'

....and with a given depth (in the module).

If you want to view it as a collapsing three you must go to the backend > easy discuss> setings > layout >categories>set toggle categories as yes ( http://screencast.com/t/EqsDYM11Poz ).

Then you can view the child categories by clicking on this button as shown in this screenshot http://screencast.com/t/6VGKj6WFsn and the child categories will appear like this http://screencast.com/t/GsTTk2ImrO8I

This is need in Joomla! module output (side bars).

Links list (right or left bar, ...aka folder browser)

For example (deep level 1):
