The format is using the language strings:

COM_EASYSOCIAL_DATE_*

These keys are found in both frontend and backend language strings.

I understood how do those work,

How can I configure datetime format in story form?
Even I disable all language files, the date and calender show up in story when I create an event.
Please see attached.

Sorry I misunderstood your question previously.

1. The calendar is generated by a 3rd party plugin, and as such if you are looking to change the Day Titles in the calendar, unfortunately this is not possible at this point.

2. The date format in that field follows the format specified in backend -> Events -> Event Categories -> Custom Fields, startend field.
