I can't seem to find a way to edit or create new templates for the Post Templates feature of Easyblog 5

Hello Bridget,

You can create new template when using a composer: http://screencast.com/t/Lo8V0ObBtLX5 . If you want to update your template, you can go to Backend>Posts>Templates and click on the template name, it will popup a composer, after changes on the template has been made, you can update it or save as new template: http://screencast.com/t/4ZVl6SAt . Hope this helps.
