Would like to know how to set the wireframe template ratings to look like nichol template system i.e 5 Stars and not 10 circles.

Sorry but unfortunately there is no easy work around for this, you will need to customize this using css.

Ok which .php file do i need to edit to adjust the layout for Nichol template. for the life of me i cant find which one it is. I have tried all the .php files in the 'latest' folder (default.main.php, default.php) and not one seems to effect the template on the frontend. (im currently rebuilding the site on localhost so cant give access currently)

I have created a overide folder as such: templates\itl_stuart\html\com_easyblog\themes\nickel2

The ratings form is only a simple HTML structure, you need to inspect the ratings and apply your own css hacks. Nevertheless, you can always modify the DOM structure at /components/com_easyblog/themes/wireframe/ratings/form.php

But I'm actually using the Nichol template for my site - the wireframe is used on one category only because it was easy to find and adjust the .php files to alter the blog layout.

But I would prefer to use the Nichol template for that category but any adjustments to the php files (as above) don't alter the layout - hence my question above.

What does the system 'default' too when the override template path has nothing in it?

If there is no theme files from your theme, it will fall back to the "wireframe" theme. In this case, look at /components/com_easyblog/themes/wireframe/ratings/form.php
